Oatmeal Meatballs with Tomato and Coconut Sauce | AIB
You have to cheer up with this recipe that will surprise you, very easy and delicious and if you do not warn your guests you will probably not realize that it is oatmeal, the “queen of cereals”, since its content in proteins, vitamins, hydrates of carbon and nutrients is much richer than other common cereals.
You can choose any sauce, and we propose this variant of tomato with coconut and curry that is very good. This recipe is also ideal for you to cook with your children, put together to make meatballs that will be a fun time and no doubt that they will eat delighted the fruit of their work.
Ingredients for Oatmeal Meatballs with Tomato and Coconut Sauce
- 3 cups of fine oat flakes
- 3 tablespoons of flour
- 1 and a half cups of water
- 1 tablespoon cumin powder
- 3 garlic cloves
- Oil (for frying)
Ingredients for the sauce:
- 3 oil tablespoons
- 2 onions
- 3 whole cayenne (or the spicy you prefer)
- 400 grams of crushed tomato
- 200 ml of coconut milk
Sauce: chop the onions and fry them together with the cayenne, when the onion is tender add the crushed tomato and leave it over medium heat for a few minutes. Then remove the cayenne from the sauce and add the coconut milk, season and add a little sugar, to remove some of the acidity of the tomato. Let the sauce be done slowly until it thickens well. Meanwhile, prepare to make the meatballs.
Meatballs: in a bowl, put the oat flakes, season the oatmeal to taste, in this case, we suggest a spoonful of cumin and 3 garlic cloves very finely chopped.
Heat a cup and a half of water until it boils. Add the water to the flakes little by little, and mix it well over the water. Each oatmeal is different, and the dough should never be too wet because it will melt in the pan. Then add 3 tablespoons of flour and blend well.
Make the balls with the dough, and fry in a pan with enough oil to cover the meatballs. Then finally mix the meatballs with the sauce and ready.
